Types of Buttercream Frosting

American Buttercream

  • Made by creaming butter with powdered sugar, then adding a splash of milk or cream.
  • Sweetest and simplest to make, often flavored with vanilla or cocoa.
  • Ideal for beginner bakers or quick desserts.

Swiss Meringue Buttercream

  • Made by heating egg whites and sugar over a water bath, whipping them into a meringue, then adding butter.
  • Silky, less sweet, and excellent for piping and smooth finishes.

Italian Meringue Buttercream

  • Made by whipping a hot sugar syrup into egg whites to create a meringue, then incorporating butter.

Prep
Bring butter to room temperature. Let it sit on the counter for 30-60 mins (soft to the touch, about 65-70°F)

Step 1
Add butter to mixing bowl of stand mixer.

Step 2
On medium speed, beat butter and salt for 3 minutes with paddle attachment.

Step 3
On low speed, mix in powdered sugar, a little bit at a time.

Step 4
On low speed, pour in heavy cream, vanilla extract, and lemon juice.

Step 5
Beat for 3 minutes on medium speed.

Step 6
Finish by beating on high speed for 30s until light and fluffy
